It is from these sacred traditions that the delectable 'ATTHE' mutton emerged.
However, word of this delectable tradition reached the Nawab of Dhaka, who sought to introduce the locals to the art of mutton preparation. Yet, the customs and beliefs of that era dictated that the Nawab's cook could not enter the local kitchens
An ingenious solution emerged - the mutton was cooked in the open, shrouded by a cloth curtain. Behind this veil, culinary magic unfolded. This ingenious method gave birth to the unique preparation we now know as 'ATTHE' mutton.
Notably, the traditional 'ATTHE' recipe abstains from using onion, garlic, oil, or water in the cooking process, retaining its authentic flavors. While there have been slight modifications to accommodate modern times and health considerations, the essence of this culinary heritage remains untouched.
The name 'ATTHE' itself carries a story within it. In the times when sacrifices were offered in honor of Shakti (Sati), every family had to contribute. It was calculated that an eighth portion of a seer would be served to the community in earthen pots (kaptis). From this division, it earned the name 'ATTHE', symbolizing both its portion and the delightful taste of being served in earthenware
